A classic. A generous helping of deep red tomatoes that have been dried in the midday Italian sun (mezzogiorno). These tomatoes infuse a wonderful aroma to the olive oil they are preserved in, which in turn can be used for dressings or simply with fresh bread. Also infusing in the olive oil is garlic and a few bay leaves. This jar is bursting with flavour.
Serving suggestion:as an antipasti with involtini melanzane, pate di olive and fresh bread drizzled with the oil.

After the truffle there is the Porcini. La Sila is Europe's largest high altitude plateau with 32,125 acres of green rolling hills, dappled forests and lakes in places reaching 2000m. In summer it has a cool alpine climate, winter brings thick snow and spring an abundance of wildflowers but for mushroom pickers autumn is the most important season. A delectable and delicate taste that again infuses the olive oil. In Italy they are used in many ways particularly pasta salsa, always appreciating the quality of this desirable mushroom.

This vibrant delight, gives us a delicious taste with a little spice! The tradition of mushroom picking in Italy and particularly Calabria goes back centuries and these skills have been past on by generation to generation. These mini spicy peppers have been individually stuffed with a scrumptious combination. An antipasti that has developed over the years, with a slightly modern twist incorporating tuna. But here at the Kitchen we won't grumble because it is truly yummy! We're sure once you've tasted it you'll agree!

80% of Italy's olive oil originates in Calabria and close neighbour Puglia. Fields with perfect rows of ancient olive trees populate the interior of Calabria. Knowing that it can take 50 to 100 years for a tree to start producing very high quality olives, one can further appreciate the exceptional taste of the olives these ancient twisted trees produce. Accompanying the olives is wild growing mountain fennel and oregano.

'Ripieni' refers to full or stuffed and one can agree that Pomodori Ripieni is stuffed full of flavour! The deep red pomodori secchi give a perfect canvas for the glistening silver of the anchovy aswell as the bay leaves. In Italy the anchovy is used in a wide range of dishes, with the salty taste bringing out flavour of your accompanying ingredients.

A true Calabrian delicacy, that has been use in Italian cooking for centuries. Only found in Calabria, the traditional methods in finding these have not changed. The skills have been passed down from generation to generation. With each individual cipolla being dug up individually from about a foot underground, there is a lot of skill and work involved in obtaining these. But it's worth it! Give them a try...
